Emerald Velvet Cake With Green Butter Cream Icing

Well this is a very pretty cake with a vivid green icing I have had this cake for a long time for St. Paddy's day I take it to fellowship around St. Paddy's day and it is gone in a flash of coarse all of the people want the recipe. Read more . I did have a photo for last years cake but have lost it now my digital camera is broken or I would have had a photo with this cake. I will post a photo the next time I make this cake for Spring gathering at our Family social in June.
Ingredients:
1/2 cup butter
1-1/2 cup sugar
2 large eggs
2 tbsp. powdered cocoa
2 (1/2 oz.) bottles green food coloring
1 tsp. salt
2-1/4 cups all purpose flour
1 cup buttermilk
2 tsp. pure vanilla extract
1/4 tsp. pure almond extract
1 tbsp. white vinegar
1 tsp. baking soda
butter cream icing
1/2 cup butter
1/2 cup vegetable shortening
3 tbsp. all purpose flour
1 (16-oz.)pkg. confectioners sugar
1/8 tsp. salt
1 tsp. pure vanilla extract
1/2 tsp, pure almond extract
3 to 4 tsp. milk
3 to 4 drops green food coloring
Directions:
1. Preheat the oven to 350*F.
2. Cake:
3. Cream butter and sugar until fluffy using medium speed of an electric mixer for 4 minutes. Add eggs and beat 2 minutes on high speed.
4. In a deep bowl put cocoa into green food coloring and make into a paste, slowly add to the batter.
5. Add salt to flour, then add dry ingredients alternately with buttermilk with mixer on low speed.
6. ad vanilla, vinegar and soda, blend well.
7. Pour in 2 9 layer pans, greased and lined with waxed paper.
8. Bake 25 minutes or until cake test for doneness.
9. Cool on a wire racks for 15 minutes and remove from cake pans and cool on wire racks until completely cooled.
10. Butter Cream Icing:
11. Cream butter ans shortening, blend in flour 1 Tbsp. at a time, Beating thoroughly after each addition.
12. Sift confectioners sugar and salt a small amount at a time beating constantly.
13. Add extracts
14. Add milk as needed fro desired consistency
15. Add green food coloring.
16. spread on cooled cake.
