These are my favorite Mashed potatoes. When I was growing up I tasted some sweet mashed potatoes and love the flavor but hated the texture so I went home and created my own. After an accident one day with too much pepper and some jalapeno juice I realized that sweet and spicy was the only way to go. :o)

2 tablespoons jalapeno juice
1/3 cup pickled jalapeno pepper
1/3 cup red pepper
1/3 cup yellow pepper
1 tablespoon chili powder
3 tablespoons margarine
1 teaspoon salt
1/2 cup cheddar cheese, shredded
Directions:
1. Chop red and yellow peppers and pickled jalapenos finely or food process.
2. Wash and Peel Potatoes.
3. Put in Large pot of water and boil until potatoes are soft.
4. Drain potatoes.
5. Return to pot.
6. Use potato masher to smash potatoes until there are no visible lumps.
7. Add: 2 Tblsp. butter, 1/2 cup half and half, jalapeno juice, pepper, Splenda, brown sugar, jalapenos, red and yellow peppers, salt, and chili powder, to pot.
8. Beat with mixer for 1and1/2 minutes (or until perfectly creamy and smooth).
9. Return to stove top.
10. At a medium to low heat and add the other 1/2 cup of half and half and the last Tblsp of margarine.
