Poundcake that rocks Special poundcake attributed to Elvis.Reprinted every year in our local newspaper during Elvis Week which begins on that Saturday at Graceland in Memphis
Ingredients:
3 cups sugar
2 sticks(one cup)butter
7 eggs,at room temperature
3 cups cake flour,sifted twice
1 cup whipping cream
2 teaspoons vanilla extract
Directions:
1. Heat oven to 350 degrees
2. Combine the sugar and the butter in bowl of electric mixer
3. Beat on medium speed until creamy, about 3 minutes.
4. Add eggs, one at a time, beating well after each addition.
5. Stir in 1/2 of the flour
6. Add whipping cream
7. Beat in remaining flour and vanilla
8. Pour batter into 2 buttered and floured 81/2-by-41/2 inch loaf pans.
9. Bake until golden and a tester inserted in the center of cakes comes out clean,about 1 hour.
10. Cool in pans 5 minutes
11. Remove from pans. Cool completely on wire racks.
