Ingredients:
2 box(es) jiffy corn muffin mix |
2 eggs |
2/3 cup(s) buttermilk |
1 pound(s) breakfast sausage |
4 green onions |
1/2 red bell pepper, chopped |
8 ounce(s) cans of green chilis hatch if available |
1 tablespoon(s) minced garlic |
8 ounce(s) shredded cheddar |
Directions:
1. Preheat oven to 400 degrees. 2. ) Mix muffin mix, eggs and buttermilk together in large bowl. 3. ) Fry and crumble sausage and drain on paper towels. 4. ) Drain most of grease but leave enough to saute veggies. 5. ) Saute onions, bell pepper, chilis and garlic. 6. ) Mix cornbread batter, veggies and cheese together. 7. ) Spray 13 X 9 with cooking spray and spread mixture in it. 8. ) Bake at 400 for 25-30 minutes. |
