Chock full of nutrients and delicious too! I swapped some ingredients to fit what I had in my pantry. So: you can also add in some sunflower seeds in place of half of the almonds, use maple syrup instead of honey, add more dried fruit (like apricots!)
Ingredients:
1/2 cup oats, regular and quick and instant, unenriched, dry
1/2 cup wheat germ
1/4 cup wheat flour, whole-grain
3/4 cup raw whole almonds
40 g dates, domestic, natural and dry
2 1/2 oz honey, strained
40 g dried apricots
1/2 cup milk, dry, nonfat, instant
1/2 teaspoon cinnamon, ground
2 large egg, whole
2 tbsp flax seeds
Directions:
1. Preheat your oven to 350 degrees F.
2. Coat a 9 by 13 inch baking pan with cooking spray. Lay wax paper on top of this, covering all exposed areas of the pan. Spray again with cooking spray.
3. Combine the oats, flour, almonds, dates, cranberries, dry milk, and cinnamon in a food processors until finely chopped (you'll probably still see chunks of nuts).
4. Add honey and eggs and pulse in the food processor until the mixture resembles a coarse paste.
5. Spoon out the mixture onto the baking pan and spread until almost completely even.
6. Bake for about 20 minutes, or until JUST done.
7. Cut into 12 pieces (or however many you want, really) and enjoy!
