Ellen's Brown Rice Spanish Rice

Nice way to jazz up brown rice.
Ingredients:
3 tbsp. olive oil
1 c. long grain brown rice, rinsed clean
2 c. water
1 medium yellow onion, diced
1 tbsp. cumin
1 tsp. chili powder
1/8 c. fresh cilantro, chopped
4 1/2 oz. (chi-chi's) green chilies, diced
8 oz. tomato sauce
Directions:
1. Sautee rice in 1 tbsp. of olive oil in a 2 quart pot. Cook just long enouch to coat each kernel with the oil.
2. Add the water and cover. Cook over high until steam begins to escape from the pot. Remove from heat for 5 minutes (leaving cover on). Return to heat and cook on very low for 25 minutes (leaving cover on).
3. Meanwhile, sautee the onion, cumin, and chili powder in a frying pan, until the onion is transluct.
4. When the rice is done, add it to the frying pan and stir.
5. Then add the remaining ingredients and stir.
6. Adjust seasoning to your personal taste (you might want to add some Tabasco sauce).
