Elegant Spinach-artichoke Brunch Eggs

This is an original recipe that was developed for an elegant brunch. It looks complicated, but the trick is to assemble all ingredients in advance. It goes together quickly. It is killer good and impressive.
Ingredients:
1 english muffin, split
4 slices thick cut smoked bacon
2 double handfulls of fresh spinach
10 mushrooms
1/2 can artichoke hearts, drained
2 cups heavy cream
2 pieces canadian bacon or same amount of tasso (preferred), finely minced.
1/2 tsp dry basil
1 tsp minced garlic
3 tbs unsalted butter, divided use
4 eggs, poached
pinch white pepper
pinch of tarragon
dash of louisiana hot sauce
splash (1/3 cup) of white wine, plus one glass, divided use
red bell pepper strips (optional)
Directions:
1. Crisp fry bacon, set aside
2. split English muffin and toast (1/2 per person), set aside
3. slice mushrooms, set aside
4. wash spinach, set aside
5. Finely Mince tasso or Canadian bacon
6. In heavy bottom sauce pan place 2 cups heavy cream, tasso or Canadian bacon, basil. Bring to simmer. Do not boil. Reduce to half, stirring to prevent sticking.
7. Add pinch of white pepper, dash of Louisiana Hot Sauce. Taste for salt. If using tasso, it may be salty enough.
8. Add 1 tbs unsalted butter. keep warm an set aside
9. In wok-type pan, heat 1 tbs butter, 1 tsp minched garlic, add mushrooms, tarragon, white pepper, splash of white wine
10. Saute until mushrooms are lightly wilted.
11. Add spinach and barely wilt (about 30 seconds) DO NOT overcook, set aside
12. In separate skille melt 1 tbs butter and heat artichokes, set aside
13. Poach four eggs
14. Toast English muffin
15. Assembly (for one)
16. Smear small amount of cream sauce on plate, top with 1/2 muffin
17. Add one ounce cream sauce to top of muffin
18. Add 2 slices bacon
19. place 1/2 of spinach-mushroom mix over bacon
20. place 2 eggs
21. top with artichoke hearts
22. Top liberally with more cream sauce.
23. Garnish with red bell pepper strips, if desired
24. (Now is the time to begin sipping reserved glass of wine)
25. Serve with fresh fruit cup, garlic cheese grits made with smoked gouda, mimosas, flavored iced tea or your favorite brunch beverage
26. NOTE: Tasso is dried seasoned pork butt. If using canadian bacon, sprinkle bacon, before mincing, with pinches of black pepper, granulated garlic, cayenne pepper and just a dash of Worcestershire
