Elegant Ham-Pineapple Rings

A recipe my mother often used for entertaining. Serving size (1 or 2 rings) depends on the appetites of the people being served. She always made it with ground ham and beef but I have substituted ground turkey ham for pork ham or ground turkey for beef and it tasted almost as good (it didn't work so well to substitute turkey for both meats at the same time). This dish goes well with a rice pilaf and salad on the side.
Ingredients:
1 lb ground smoked ham or 1 lb turkey ham
1 lb leanest ground beef or 1 lb ground turkey
1 1/2 cups soft breadcrumbs
2 eggs, beaten
1 cup milk
1 (15 ounce) can sliced pineapple, with 1/2 cup juice preserved
1 1/2 cups brown sugar
1 teaspoon dried mustard
1/2 cup vinegar
Directions:
1. Preheat the oven to 300°.
2. Mix the ground meats with the crumbs, eggs and milk in a large bowl, and form the mixture into 16 patties.
3. Make 8 sandwiches, each composed of a single pineapple slice between two meat patties, and poke a hole down thru the center of each.
4. Bake in a baking pan 11/2 hour.
5. Immediately after the ham-pineapple rings go into the oven, mix together the brown sugar, mustard, vinegar and reserved pineapple juice and pour over the patties as they bake.
6. Variation: You may also halve the amount of meat used and serve each ring as a pineapple slice topping a single meat patty; if you do this, shorten the baking time to 1 hour.
