Elaines Shrimp And Salad Stuffed Tomatoes

Ingredients:

Directions:

  1. Trim the rounded end of the tomatoes to enable them to stand alone
  2. Cut the tomatoes into halves
  3. Scoop out centers
  4. Combine the tomato centers with the celery, onion, chili peppers, green and red peppers, basil and oregano
  5. Combine well
  6. Spoon into the tomato halves

  8. The shrimp:
  9. Pan fry the shrimp until nicely pink.
  10. Plunge shrimp into cold water to stop the cooking process
  11. Arrange the shrimp on the tomatoes as illustrated
  12. Garnish with parsley sprigs, and set in a bed of tossed salad
  13. Refrigerate until ready to serve
