These muffins are made with the pulp extracted from the vegetable cocktail recipe. They are heart healthy, filling, and delicious. I developed this some time ago, but thought I would share it with you to enjoy :+D
Ingredients:
pulp from the vegetable cocktail
2 eggs
1 cup milk
1/4 cup olive oil
1/2 cup honey
1/4 cup packed brown sugar
1 tsp salt
2 tsp vanilla extract
about 2 1/2 cups white flour
about 1 cup whole wheat flour
1 tbsp baking soda
2 tsp baking powder
Directions:
1. Preheat oven to 350*F
2. Combine all dry ingredients, and blend well together
3. Add the liquids
4. Combine well
5. Spoon into greased muffin pans
6. Bake 15 to 20 minutes until golden brown
7. This recipe usually makes 2 dozen muffins, depending on the size you prefer
