My husband got this recipe from another guy at work. He made this for a dinner for me when I was still a vegetarian. Being as he never cooks I was amazed at how good this was.
Ingredients:
2 teaspoons olive oil
1/2 cup onion
1 (14 ounce) can kidney beans
2 1/2 cups stock or 2 1/2 cups water
1 cup rice
1 cup corn
1 cup salsa
1/4 cup green lentil
1/4 cup green pepper
1/2 teaspoon chili pepper
tomato, slices (optional)
Directions:
1. Saute onions in the oil.
2. Add in the rest of the ingredients.
3. Simmer 30 minutes.
4. Serve over tomato slices.
