The cookbook 2500 Recipes:Everyday to Extraordinary by Andrew Schloss has the most different and delightful recipes. This one really just jumped out at me. And rightly so. I think you will love it, if you love cheesecake, chocolate and brandy all in one place.
Ingredients:
chill time: 2 hours
4 oz. unsweetened chocolate melted and cooled
1 teaspoon unsalted butter
1/3 cup graham cracker crumbs, or other plain cookie crumbs
2 pounds cream cheese, at room temperature
1 cup granulated sugar
1/4 cup brandy
2 tablespoons vanilla
5 eggs
1/4 cup sweet chocolate chips or white chocolate chips for a black and white cake
Directions:
1. Preheat the oven to 200° F. Grease an 8 inch soufflé dish or springform pan with the butter and dust with cracker crumbs.
2. In a large bowl, using an electric mixer, beat cream cheese until fluffy. beat in sugar, brandy and vanilla until very smooth. beat in eggs, just long enough to incorporate.
3. Add cooled melted chocolate gently and lastly the chips
4. you can also just drop chips on top for a concentrated flavor
5. Pour into prepared pan and bake for 8 hours, until set. Let cool in pan, then unmold.
6. Cover and refrigerate for at least 2 hours, until chilled
