I made this one night after finding nothing good in the fridge! Until I looked! Everyone loved this, and so simple!
Ingredients:
2 eggs
2 slices bread
2 tablespoons salsa
2 slices cheese
mustard or tomato sauce
Directions:
1. Boil water for poached eggs, adding a little vinegar.
2. Preheat grill for cheese.
3. When boiling, add eggs.
4. Heat salsa in microwave for a minute.
5. Toast bread.
6. When eggs are to your liking, remove from water.
7. Butter toast, spread a layer of salsa, top with poached egg, followed by a slice of cheese.
8. Put under the grill until brown and slightly bubbled.
9. Squeeze over prepared mustard and or tomato sauce.
10. Beautiful and simple!
