This is a recipe for 1 serving... I live by myself and love to cook, so most of my meals I make just for one. Makse sure the pan is the right size... You want enough kale or other greens to completely fill the pan-it should look like way too much when you put it in!! Delicious meal packed with vitamins, minerals, protein, and flavor!
Ingredients:
2 1/2 cups kale, chopped
1/4 onion, chopped
1 tbsp chopped garlic, minced
1 tsp dried oregano
2 eggs
1 salt and pepper to taste
Directions:
1. In small saucepan, saute onion (You can also add some sundried tomatoes, chopped), and garlic over med-high heat in just enough water (for the tomatoes to become soft) so it doesn't stick to the pan.
2. Add oregano and kale (or other greens) and pour in another tbsp of water. This will steam the kale beautifully and keep it from sticking to the pan. Don't overcook!
3. Create a small dip in the middle of the kale with the back of a spoon and crack two eggs into the nest of kale. Cover and cook till the whites of the eggs are completely opaque (if you're making more than one serving, make several small dips and crack one egg into each). Make sure there's enough water in the pan to steam the eggs and keep the bottom of the greens from burning.
4. Carefully slide your nest onto a plate.
5. This is wonderful with a side of plain brown rice or a piece of whole wheat toast
