This dish is a favorite with me and mine. Plus it doesn't have to be just breakfast.
Ingredients:
3 t. minced onion
3/4 c. minced green pepper
2 t. butter
5 c. diced, cooked corn beef (one 12 oz can = 2 cups)
2lb bag frozen diced potatoes (hash brown , diced), thawed
1/2 tsp. pepper
12 eggs, poached
salt and pepper to taste
Directions:
1. Saute' onion and green pepper in butter until tender
2. Mix with corned beef, potatoes and pepper
3. Mash until well mixed
4. Flatten out on wax paper to about a 1 inch thickness
5. Cut into 12 large circles
6. Brown on both sides
7. Top each with a poached egg
8. NOTE: Hash circles can be prepared in advanced and refrigerated until ready to cook
