Eggplant With Spinach And Apple Wood Bacon And Goa...

This must have side dish is great for a light lunch.
Ingredients:
1 eggplant cubed into 1/2 pieces
1 half onion diced
3 slices of apple wood smoked bacon diced
1 teaspoon of olive oil
1 package of spinach steamed
6 cherry tomatoes halved
juice of half a lemon
1/4 cup of crumbled goat cheese
1 teaspoon of fresh basil
1 teaspoon of fresh dill
sea sale to taste
Directions:
1. In a small sate pan, add the bacon, onion. Eggplant and a teaspoon of olive oil
2. Cook until the bacon is well done and the eggplant is tender.
3. Squeeze the juice of the lemon to deglaze the pan.
4. Sprinkle with salt and taste ad additional salt to your liking later.
5. In a small bowl add the steamed spinach and the goat cheese and mix well.
6. Add the eggplant, tomatoes and toss.
7. Serve with some warm olive bread
