Low-Calorie Eggplant Parmesan
Ingredients:
1 eggplant
3 1/2 cups tomato sauce
1/4 cup grated parmesan cheese
3/4 cup fat free mozzarella cheese
1 basil, parsley, garlic to taste
Directions:
1. Peel and cut the eggplant into 1/2 slices.
2. Pour a little of the spaghetti sauce onto the bottom of a greased 13x9 pan until the bottom is covered.
3. Place the eggplant slices in the pan and top with the remaining spaghetti sauce. Sprinkle any Italian seasonings and cheeses on top of the eggplant slices.
4. Bake for 45 minutes or until tender at 375 degrees.
