1. cut eggplant in cubes 2. In a non stick pan 3. add oil and heat 4. add mustard seeds and allow it to pop 5. add( cut eggplant into pan 6. add salt 7. add mustard powder 8. cover with lid and cook on low flame 9. leave for 5 min 10. after 5 min stir the eggplant making sure the eggplant is not broken.(i.e. fold eggplant) 11. add the eggplant curry powder to make sure it coats all the eggplant. 12. continue to stir without breaking eggplant 13. cook for 3-4 min. add non stick spray if needed.
