This is good as a side dish or as a main dish. I serve it as a main dish with a nice garden salad. Enjoy
Ingredients:
1 pound ground round
1/2 cup chopped white onion
1/4 cup chopped bell pepper
1 large eggplant peeled and sliced
1 cup italian seasoned bread crumbs
2 egg whites
1/2 cup milk
1 teaspoon italian seasoning
2 cups tomato sauce
1 teaspoon salt
1 pound mozzarella cheese
Directions:
1. Brown hamburger, onion, pepper, Italian seasoning and salt together then drain of excess fat.
2. Mix egg whites and milk.
3. Dip eggplant slices in egg mixture then roll in bread crumbs.
4. Place on cookie sheet and brown under broiler on both sides.
5. Layer eggplant, cheese and meat mixture in casserole dish.
6. Repeat layers.
7. Pour tomato sauce over all in casserole dish.
8. Bake at 325 for 1 hour.
