I found this recipe a while ago and figured i would post here for safe keeping.. Ingredients:
3 cups all-purpose flour |
1/2 cup sugar |
3 teaspoons baking powder |
1/2 teaspoon salt |
1/2 teaspoon ground nutmeg |
1 egg |
1 3/4 cups eggnog |
1/2 cup vegetable oil |
1/2 cup golden raisin |
1/2 cup chopped pecans |
Directions:
1. 1.In a large bowl combine first 5 ingredients. 2. 2.In another bowl combine egg, eggnog and oil. 3. 3.Stir into dry ingredients just until moistened. 4. 4.Fold in raisins and pecans. 5. 5.Fill greased or paper-lined muffin cups 2/3 full. 6. 6.Bake at 350 degree for 20 to 25 minutes or until toothpick comes out clean. 7. 7.Cool for 5 minutes before removing from pans to a wire rack. |
