Eggless Tofu Sandwich Spread

This will satisfy your taste for home-style egg salad sandwich, but without all the cholesterol.
Ingredients:
1 lb tofu
1/4 cup low-fat mayonnaise or 1/4 cup fat-free mayonnaise
1/4 teaspoon salt
2 teaspoons dijon mustard
1/4 teaspoon garlic powder
white pepper
1/8 teaspoon turmeric
1 green pepper, seeded and minced
3 green onions, wiht tops, minced
1 teaspoon parsley
Directions:
1. Press tofu to remove liquid; drain and discard liquid.
2. Mash tofu with a fork to crumbly consistency.
3. Add the rest of the ingredients.
4. Mix well.
