Eggless Coffee Banana Bread

Ingredients:
1 1/2 cups all puporse flour
1 teaspoon baking soda
1 teaspoon baking powder
1 pinch salt
1 cup sugar
1/4 cup butter
1 teaspoon flax seed meal (mixed with 1/4 cup water)
3/4 teaspoon vanilla extract
1 cup fresh brewed coffee
1 cup mashed banana
Directions:
1. Preheat oven to 350°F.
2. Sift together flour, baking soda, baking powder and salt in a medium bowl.
3. In a separate bowl,mix gently sugar, butter, flax seed mixture/egg and vanilla.
4. Add the dry ingredients to wet ingredients. Slowly add coffee, mixing until combined. Make sure not to over mix the mixture.
5. Add the mashed bananas and blend thoroughly.
6. Pour into greased 5-by-9 inch loaf pan.
7. Bake for 1 hour or until toothpick inserted in the center comes out clean.
8. Let it cool in the pan. Remove and transfer it to wire rack.
