Egg White Omelet with Vegetable/Cheddar Filling

Good, quick and healthy breakfast for one!
Ingredients:
3 large egg whites
1 tsp water
2 tsp dill, chopped (optional)
1/2 cup spinach, loosely packed and thinly sliced
1/8 tsp salt
1/8 tsp black pepper, ground
1 small tomato, finely chopped
1 tbsp fat-free cheddar cheese
Directions:
1. Whisk egg whites, water, dill, salt and pepper together in medium bowl until soft peaks form.
2. Toss spinach, tomato, and cheddar together in separate bowl
3. Lightly coat an omelet pan or small skillet with cooking spray and heat over medium heat for 1 minute
4. Pour egg mixture into pan and cook eggs until eggs begin to set on bottom
5. Spread filling over half of omelet, leaving 1/2 border and reserve 1 tbsp mixture for garnish
6. Lift up omelet at edge nearest handle and fold in half, slightly off-center, so filling peeks out. Cook for 2 minutes
7. Slide omelet out onto serving plate. Spread reserve filling on top as garnish
