Vegetable-filled healthy omelet
Ingredients:
1/3 c onion, chopped
1/3 c pepper, green, chopped
1/3 c mushrooms, chopped
1 clove garlic, chopped
3 egg whites
2 tbsp salsa, commercial
Directions:
1. Spray pan with Pam.
2. Saute vegetables until soft.
3. Remove vegetables from pan, add egg whites.
4. Cook until slightly firm.
5. Add vegetables to 1/2 of omelet.Cook a little more.
6. Fold in half. Slide onto plate. Top with salsa.
