Try this the next time you feel like an omelet. Can either be eaten as is or with rice and soy or chilli sauce to make it into a main dish.
Ingredients:
3 eggs, beaten
1 chilli, chopped finely
1 scallion, chopped finely
1 teaspoon garlic
1 tablespoon soy sauce
1/2 tablespoon oyster sauce
5 teaspoons oil
Directions:
1. Beat the eggs in a bowl and add the scallions, garlic, soy sauce, oyster sauce, and chilli,
2. mixing well.
3. Heat the oil in a wok over high heat until the surface
4. ripples. Add the eggs and swirl the pan so the egg rolls over
5. the surface evenly. Turn the heat to low and
6. cook until the bottom of the pancake is set and browned,
7. turn and cook until browned on the other side. Remove
8. and serve.
