I've been looking for a simple no-cook egg nog using egg substitutes. This sounds easy enough: no cook, blend, chill and serve. The recipe called for 1 cup non-dairy creamer (not my favorite), so I'm going to add some chia seeds to give it more body. Some alternate ideas include using dates and bananas in place of some or all of the sweetener. Might also work as a base for a tasty green smoothie.
Ingredients:
1 cup egg substitute
4 cups vanilla almond milk
1 tablespoon chia seeds
3 tablespoons stevia or 3 tablespoons agave syrup
1 tablespoon vanilla extract
1 teaspoon nutmeg
1 teaspoon cinnamon
Directions:
1. Soak the chia seeds in 1 cup of almond milk in the blender for 5-10 minutes. Add the rest of the ingredients and blend. Chill in the fridge for a couple of hours. Serve with a little extra cinnamon and nutmeg sprinkled on top.
