Ingredients:
1/2 cup frozen peas
4 eggs, beaten
2 teaspoons sesame oil
2 tablespoons peanut oil
cold cooked rice
2 teaspoons salt
1/2 teaspoon pepper
3 tablespoons spring onions, finely chopped (white part only)
4 ounces fresh bean sprouts
Directions:
1. Thaw frozen peas. Drain in colander.
2. Combine eggs and sesame oil in a small bowl and set aside.
3. Heat a wok over high heat until hot. Add the oil and when it is hot and slightly smoking, turn the heat to medium and add the eggs. Stir fry the eggs for 2 minutes, then add the cooked rice and stir fry for 3 minutes, mixing well.
4. Then add the peas, salt and pepper. Stir fry 5 minutes over high heat.
5. Add spring onions and bean sprouts and stir fry for 2 minutes. Turn onto a platter and serve at once.
6. Note: DO NOT ADD ANY SOY SAUCE TO THIS!
