Ingredients:
4 hard-boiled eggs, peeled and chopped
1/4 cup finely chopped watercress leaf
4 green onions, minced
2 tablespoons mayonnaise
2 tablespoons sour cream
salt and pepper
6 slices white bread
2 tablespoons butter, softened
1 sprig watercress
Directions:
1. In a small bowl, combine egg, watercress, onions, mayo and sour cream. Season with salt and pepper.
2. Place bread on a cutting board and cut into 2 inch rounds.
3. Spread butter lightly over bread and then spoon egg mixture over the top.
4. Garnish each with a watercress sprig.
