Egg And Hash Brown Casserole

A good and easy breakfast when you have a small crowd.
Ingredients:
12 eggs
1 c. plain yogurt
1 tsp. seasoned salt (or, to taste)
3/4 stick butter or margarine
2 c. shredded hash brown potatoes (thawed)
1/4 c. chopped onion
1 c. grated sharp cheddar cheese
Directions:
1. Preheat oven to 350°F.
2. Spray or grease a two-quart casserole dish with cooking oil.
3. Beat eggs, yogurt, and salt together.
4. Melt butter and lightly sauté onion.
5. Add thawed potatoes.
6. Stir to mix.
7. Pour in egg mixture and lightly stir to blend ingredients.
8. Pour into casserole dish.
9. Sprinkle grated cheese over casserole.
10. Bake at 350° for approximately 25 minutes or until knife comes out clean when inserted.
11. Cut into 8 squares.
