This simple preparation was taken from Private Collections: A Culinary Treasure; this cookbook was issued by the Women's Committee of the Walters Art Gallery in Baltimore in 1973.
Ingredients:
1 lb best quality lean ground beef
1 teaspoon chili powder
1/4 cup buttermilk
salt
2 tablespoons butter
1 tablespoon olive oil
5 slices dry toast
Directions:
1. Lightly mix together the first four ingredients, being careful not to pack down. Form into 4 thick patties (about one inch thick). Heat the butter and the olive oil up together in a heavy frying pan until very hot. Put the patties in and quickly cover with a screen splatter guard. Cook for about two minutes. Turn and cook the other side for two minutes. Turn again and cook for two minutes. Turn again and cook for two minutes; each side will have cooked for a total of 4 minutes. Remove immediately and serve on dry toast.
