Similar to hummus, but made from edamame. Low in fat and calories...great for snacking. Note that prep time does not include the time required to cook the edamame. (I use frozen and cook it in the microwave, which only takes a few minutes.)
Ingredients:
1 1/2 cups edamame, cooked, shelled, cooled
2 1/2 tablespoons lemon juice (freshly squeezed)
2 teaspoons lime juice (freshly squeezed)
2 garlic cloves, minced
1 tablespoon parsley, chopped finely
1/2 teaspoon salt
1 teaspoon onion powder
3 tablespoons plain fat-free yogurt, plain
1 teaspoon low sodium soy sauce
Directions:
1. Mix edamame, lemon & line juice, garlic, parsley, salt and onion powder in food processor or blender and blend until mixture resembles hummus (paste like). Add the olive oil and blend. Add the yogurt and stir well. Serve in a small bowl with vegetables for dipping, topped with a swirl of low sodium soy sauce.
