A healthy way to start the New Year. High in soy protein and easy to make.
Ingredients:
1 1/2 cups edamame
2/3 cup corn
1 small tomato
1/2 cup cucumber
2 tablespoons olive oil
1 tablespoon vinegar
1 tablespoon spicy mustard
Directions:
1. 1. Cook edamame and corn in microwave until done ( about 3 minutes).
2. 2. Chop tomato and cucumber.
3. 3. Add oil, vinegar and mustard.
4. 4. Serve immediately.
