Ingredients:

  • 1 1/2 cups edamame
  • 2/3 cup corn
  • 1 small tomato
  • 1/2 cup cucumber
  • 2 tbsp olive oil
  • 1 tbsp vinegar

Directions:

  1. 1. Cook edamame and corn in microwave until done ( about 3 minutes).
  2. 2. Chop tomato and cucumber.
  3. 3. Add oil, vinegar and mustard.
  4. 4. Serve immediately.
