This recipe goes with Teriyaki Salmon with Green Tea Butter Sauce
Ingredients:
2 tablespoons peanut oil
1 large shallot, thinly sliced
1 large egg, beaten
4 cups hot cooked jasmine rice
1/2 cup edamame (fresh soybeans)
1 carrot, shredded (about 1/2 cup)
2 green onions, chopped (about 1/4 cup)
2 tablespoons soy sauce
2 tablespoons dark sesame oil
Directions:
1. Heat peanut oil in a wok or large skillet over medium-high heat. Add shallot and egg; cook 1 minute or until egg is set, stirring constantly. Add rice and next 3 ingredients; cook 1 minute, stirring constantly. Add soy sauce and sesame oil; cook 1 minute, stirring constantly.
