This is a great icing which uses simple ingredients and has a wonderful creaminess that is perfect for icing cupcakes.

Ingredients:

2 cups sifted confectioners' sugar

1/4 cup soft butter

1/4 teaspoon salt

1 teaspoon vanilla

3 tablespoons cool brewed coffee

Directions:

1. Cream the confectioners' sugar and butter for about a minute.
2. Add and beat until smooth: the salt, vanilla, and coffee.
