Easy Vichy Carrots

A twist on a French classic. Prepared in Vichy France with sparkling water from the springs of the locality, we can't always get Vichy water here. Sprite adds the carbonation and sweetness all in one. If you use mini carrots (not baby - the ones with little green tops) they add quite an elegant touch to a main course. Read more . Kids love them, because they are sweet.
Ingredients:
1 can of sprite
1 lb carrots, sliced into coins (mini/baby carrots will do, but don't slice)
4 tablespoons butter
2 tablespoons parsley, finely chopped
salt & pepper to taste
Directions:
1. In a medium saucepan, melt butter over medium heat and cook parsley for a few minutes.
2. Add carrots and stir to coat with butter and parsley.
3. Season with salt and pepper and add soda.
4. Bring to a boil, then reduce heat to simmer.
5. Simmer until the soda is reduced by half.
