I couldn't live without canned tuna. I always keep a supply in my pantry. Here is a simple way to turn your can of tuna into a dinner treat.
Ingredients:
1 (12 ounce) can light tuna, drained
1 (10 3/4 ounce) can cream of chicken soup
1/2 cup milk
1/4 cup frozen chopped onion, thawed
1 (10 ounce) box frozen mixed vegetables, thawed
1 cup chopped cooked potato
salt and pepper
1 (7 1/2 ounce) can refrigerated biscuits, quartered
Directions:
1. Heat oven to 375°F.
2. Heat soup and milk in a saucepan on low heat until smooth.
3. Stir in vegetables, tuna, potato, salt and pepper.
4. Continue cooking until mixture comes to a low boil.
5. Transfer to a 1 1/2 quart casserole top with biscuits.
6. Bake 18 to 20 minutes or until biscuits are golden brown.
