This is a quick, refreshing salad. Serve with fresh Whole Grain Italian bread to sop up the juice!
Ingredients:
8 campari tomatoes, cut into quarters
1/2 cup red onion, sliced
1/2 cup english cucumber, sliced
1/4 cup banana pepper, sliced
1/2 cup olive oil
1/8 teaspoon salt, to taste
1/8 teaspoon black pepper, to taste
Directions:
1. Cut up tomatoes into big chunks or quarters and put into bowl, with all juices. Add red onion, cucumber and banana pepper. Add olive oil and season to taste.
2. Serve with fresh bread and enjoy!
3. For variation, add 1/2 cup crumbled feta cheese.
