Here's an old family recipe for a quick and easy soup that requires little attention while cooking on your stovetop. This is great if you have children and perfect for family dinners anytime of the year! Ingredients:
2 pounds of hamburger (or ground turkey), cooked, drained (i use 4% fat beef)
1 medium onion, chopped
1 package taco seasoning
2 cups of water
6 green scallions, chopped
1 16-ounce can kidney beans, drained
1 16-ounce can corn, drained
1 16-ounce can of diced tomatoes (or use rotel with chiles!)
2, 8-ounce can tomato sauce or tomato soup
1 tb cumin
1 bag or tortilla chips
optional: sour cream, fresh cilantro, chopped cabbage, sliced radishes, chopped scallions and a handful of monterey jack cheese for each bowl to top soup
Directions:
1. In a large heated cooking pot, add the beef, scallions and chopped onions and cook for five minutes over high heat.
2. Reduce heat to medium and add taco mix, water and tomatoes.
3. Add tomato sauce and the rest of the canned ingredients.
4. Add the cumin.
5. Bring to a boil then reduce heat and simmer for 40 minutes.
6. Place tortilla chips in individual serving bowls and pour soup over chips.
7. Top with your favorite toppings!
8. Serve!
