We enjoy this easy salad as a cold main dish on a hot summer day. Leave out the ham and it makes a nice side dish to other summer entrees.
Ingredients:
1 c. uncooked small shell shaped pasta
2 c. frozen peas (do not thaw)
1 c. thinly sliced celery
1/2 c. chopped sweet red pepper
1/4 c. shredded carrots
scant 1/4 c. chopped green onion
1 c. cooked cubed ham
1/4 tsp. salt
dash of ground black pepper
3/4 c. mayonnaise
Directions:
1. Cook pasta according to package directions. Drain well and put in a large bowl. Add all of the remaining ingredients and stir gently to combine. Cover tightly and refrigerate until ready to serve. Stir again just before serving.
2. Note: You can easily make as much or as little as you want by adjusting the amounts of the ingredients. To save time on the prep, get the small amounts of vegetables needed from the salad bar at your local grocery store.
