You will need to make this one at least a day ahead so it can chill and the flavors can meld together.
Ingredients:
1 small can green peas
1 small can shoepeg corn
1 small can french-style green beans
1 small can chickpeas
1 large jar pimiento, chopped
1 cup chopped onions (i prefer sweet onions)
1 cup chopped celery
1/2 cup oil
1 cup sugar
1 tbsp water
salt to taste
pepper to taste
3/4 cup vinegar
Directions:
1. Drain the juice from all the canned items.
2. Put all vegetables in a bowl.
3. Mix the other ingredients together.
4. Pour over vegetables.
5. Refrigerate 24 hours.
6. Stir.
7. Serve cold.
