Easy Red Velvet Cupcakes

This is about as easy as they come for making red velvet cake.. A great Valentine recipe....
Ingredients:
1 package yellow cake mix (18.25 oz size)
2 tablespoons cocoa
5 large eggs
1/2 cup canola oil
1 cup buttermilk
2 (1 oz bottle) red liquid food coloring
cream cheese frosting
1 (8oz) package cream cheese, softened
1/4 cup butter, softened
2 1/4 to 2 1/2 cups sifted powdered sugar
1 teaspoon vanilla
Directions:
1. Beat cake mix and next 5 ingredients at low speed with an elecric mixer 2 minutes.
2. Spoon batter evenly into 24 paper or foiled lined muffin cups, filling 2/3 full.
3. Bake accoding to package directions for cupcakes.
4. Remove from pans immediately, and cool on wire racks.
5. Spread cupcakes evenly with cream cheese frosting.
6. Cream Cheese Frosting:
7. Beat cream cheese and butter at medium speed with an electric mixer until creamy.
8. Gradually add sugar, beating at low speed until smooth.
9. Stir in vanlla until mixture is blended.
10. 24 cupcakes and 2 cups frosting
