This is a great vegetarian Weight Watchers recipe. You can replace the boca crumbles with ground turkey but the point value with increase to 6 points per serving! Found on WW message boards! I usually cook and then crumble up about four boca patties.
Ingredients:
fat-free cooking spray
2 cups boca meatless ground burger
1 medium onion, chopped
16 ounces tomato sauce
1/2 teaspoon dried basil
3 garlic cloves, minced
1 teaspoon italian seasoning
mushroom (optional)
bell pepper (optional)
garlic (optional)
2 (7 1/2 ounce) cans refrigerated biscuits, quartered (should be about 50 calories each)
1 1/4 cups shredded part-skim mozzarella cheese
Directions:
1. Pre-heat oven to 350 degrees. In skillet, stir together Boca crumbles, onion, tomato sauce, basil, garlic, and Italian seasoning.
2. Add any of the optional veggies that you want, just make sure they are zero points. Add quartered biscuit dough; stir gently until biscuits are covered with sauce.
3. Spray a 9x13 casserole dish with cooking spray. Bake for 25 minutes. Sprinkle with cheese and bake an additional 10 minutes or until biscuits are done. Let stand 5 minutes before serving.
