Easy Onion Ring Loaf

This is a delicious stacked onion recipe, that is quite similar to the ones at the steak houses, and so easy to make, I usually make two batches of these, and bake in two loaf pans...you will need a double recipe of these, after you taste how good this is...you will be making these all the time.
Ingredients:
4 -6 white onions
1 cup milk
3 eggs, beaten
salt
pepper (optional)
2 cups dry pancake mix
oil (for frying)
Directions:
1. Set oven to 400 degrees.
2. Grease a 8x4-in loaf pan.
3. Slice onions crosswise, and separate into rings.
4. Combine/whisk the milk, eggs and salt to taste in a bowl.
5. Soak onion rings in mixture for 30 minutes.
6. Place pancake mix in a shallow bowl.
7. Heat oil for frying in a skillet to 375 degrees.
8. Remove onion rings from the milk mixture, dip in pancake mix, and place in hot oil.
9. Fry rings until golden brown.
10. Drain fried rings on paper towels.
11. Pack fried onion rings solidly, but loosely, without pressing, into prepared loaf pan.
12. Bake for 10-15 minutes.
13. Turn on a serving plate.
14. Delicious!
