Easy Moroccan Vegetarian Stew

This is an easy vegetarian meal that I threw together for hubby and I one night. Its super easy and oh so good!
Ingredients:
1 red onion
1 bell pepper
1 garlic clove
16 ounces chickpeas
16 ounces diced tomatoes
8 ounces corn niblets
1 cup uncooked rice
salt and pepper
chili flakes
Directions:
1. Cook rice according to package directions.
2. Saute the onion, pepper, and garlic until soft and slightly brown.
3. Dump in your other canned ingredients, and seasonings. *seasonings may be adjusted to personal preference*.
4. Simmer.
5. Serve. over rice.
