Easy Mexican Rice

An easy and delicious Mexican rice side dish, to compliment all of your Mexican meals. Can also be made ahead and used as part of a delicious filling for burritos, tacos, tostadas, etc. Much less expensive to make than a boxed mix, with no preservatives. Read more . Enjoy!
Ingredients:
3 tablespoons vegetable oil
1 1/2 cups uncooked, long grain rice
1 teaspoon granulated garlic (or 2 cloves chopped fresh)
1/2 teaspoon ground cumin
1/2 teaspoon ground oregano
1/2 teaspoon red chile powder
1/4 cup yellow onion, chopped very fine
1 (8 oz.) can tomato sauce
1 (15 oz.) can chicken broth
2 oz. water
kosher salt, to taste
Directions:
1. Heat oil in large saucepan, over medium heat. Add rice, stirring constantly, until slightly browned and golden. While rice is cooking, sprinkle with garlic, cumin, oregano, and chile powder.
2. Stir in onions and cook for a few minutes, stirring constantly. Stir in tomato sauce, chicken broth, and water. Add salt, to taste. Bring to a boil. Reduce to low heat, and simmer for about 20 minutes until rice is tender.
3. This is a very mild rice, meant to accompany spicy main dishes. To make rice more spicy, if desired, add cayenne pepper, to taste.
