Ingredients:

Directions:

  1. Preheat oven to 350 degrees
  2. Mix seasonings together and lightly rub over chops
  3. Heat the oil in a skillet over medium heat.
  4. Brown the pork chops with onions about 5 minutes on each side. Remove chops from skillet and drain oil.
  5. Mix the tomatoes, corn, kidney beans, rice, and chilies in same skillet and bring to a boil.
  6. Cook and stir for 1 minute, until heated through.
  7. Transfer the tomato mixture to a baking dish. Arrange the browned pork chops over the mixture.
  8. Bake covered 30 minutes in the preheated oven.
  9. Uncover, and continue baking 10 minutes, until rice is tender and pork has reached an internal temperature of 160 degrees
