Easy Low Fat Cornbread

Quick easy cornbread with a texture which is less crumbly than traditional cornbread.
Ingredients:
1 1/4 cups flour
3/4 cup cornmeal
1/4 cup sugar
2 teaspoons baking powder
1/4 teaspoon baking soda
1/2 teaspoon salt
1 1/4 cups low-fat buttermilk (slightly more if too thick)
1 egg
Directions:
1. Combine dry ingredients in mixing bowl.
2. Add egg and buttermilk and blend well.
3. Spread into an 8x8 baking dish sprayed with vegetable spray or spoon into prepared muffin tins and bake in a 400 degree oven for 20-25 minutes or until toothpick inserted near center comes out clean.
