This is an easy lemon coffeecake recipe that uses a manufactured cake mix. This cake is also a nice dessert item and is very portable which makes it great for potlucks, picnics, and something nice to take over to a friend's house when you're in the mood to sit and have coffee and chat about life.
Ingredients:
1 box of cake mix.. white, yellow or lemon, made to the manufacturer's instructions
2 tb fresh lemon zest
3 tb fresh lemon juice
optional addition: 1/2 cup finely chopped walnuts
icing
2 cups of powdered sugar
2 tb lemon zest
2 tb lemon juice
you can substitute butter for the oil in the cake mix and also add 1/2 of sour cream for 1/2 of the water in the ingredients for a richer-flavored cake.
Directions:
1. Mix all of the ingredients and bake according to the manufacturer's instructions.
2. When the cake has cooled to slightly warm drizzle icing over the top of cake (and sprinkle with some extra walnuts.)
3. You can also eat the cake without any icing, sprinkle it with powdered sugar or even sprinkle some toasted coconut over the top of the icing.
4. You can use a bundt or tube pan. For a potluck, try using a jelly roll pan (and sprinke with powdered sugar).
