Easy Kimchi Jjigae

Korean kimchi (or kimchee) is a spicy pickled/fermented mix of certain vegetables like cabbage. This quick stew is awesome. Leave out the pork to make it vegetarian/vegan.
Ingredients:
a handful (1/4 pound) or more of chopped pork belly, bacon, or other pork (optional)
1 onion
4+ cloves garlic
2 tsp. chopped ginger
1 cup kimchi (available at stores like whole foods, or at asian grocery stores)
2 cups water
1 package silken tofu (i used firm, but use what you like!)
hot sauce, to taste
3 t soy sauce (or to taste)
2 t rice vinegar (or to taste)
salt (to taste)
Directions:
1. In a medium saucepan, saute the pork until cooked through
2. Add the onions, garlic, and ginger; saute ~5 minutes until onions are transparent
3. Add kimchi (including any juices). Stir until kimchi is warm/hot
4. Pour in water, bring to a boil. Allow to boil while you...
5. Cut the tofu into cubes
6. Add tofu to pot
7. Taste. It'll be spicy!!!! Add as much hot sauce as you can stand.
8. Add vinegar if you think you could stand for it to be a little more piquant
9. Splash in some soy sauce for added flavor and salt
10. Add salt if needed.
11. Serve with steamed white rice to help temper the spiciness and strong flavor
